I made "Gump" bread again tonight. Generally, I like the crumb of the recipe, but I wanted it in a loaf pan. Tonight, I think I let it rise too long for the first rise. I was getting dinner on the table, and let the dough rise for at least an hour, if not more. It looks nice in the loaf, but it's not very big.
I made half the recipe in the loaf pan and stuffed the rest. I have to say that I think I'll stick to my King Arthur Flour baguette recipe for stuffing. I just like the way it comes out.
edited to say: Tonight, the stuffed Gump bread didn't look too pretty, but it really did come out good. I cut the dough (whole recipe) in half, and made one loaf of bread and three stuffed sandwiches. I layered ham, provolone, salami and roasted red peppers. When I stuffed the baguette bread I used sausage and peppers. My husband said it was the best sausage bread he's had. It's hard to compare the two bread recipes, as the baguette recipe is more like the Italian bread that we're used to. I have to try the same filling with the two bread recipes before I make a definite decision.
