What are you baking now?

Oh dear! I have almost done that a time or two. I keep a selection of extra pot lids in metal or glass - some that belonged to pots/pans I no longer even have LOL - for uses like this.

Here's another site with a ton of Artisan, No Knead bread recipes - and lots of videos. For your spare time, of course

What a great job on the turtle cake.

I baked 2 Angel Food cakes. Took one to our family reunion and kept one for home.

The bread was a hit at the party. Now its time to make some for us at home. Kim_NC thanks for the other link. Will take a look at it during lunch - NOT - must go look now too curious!

I just made 12 jars of blueberry jam... (yes, I know this is the baking thread!)... but I ended up with 4lbs of left over berries and ran out of pectin, so I decided to make some:

LEMON BLUEBERRY POUND CAKE

1/2 c. butter, softened
1 c. sugar
2 eggs, well beaten
1 tbsp. lemon juice
2 tbsp. lemon peel
1 1/2 c. sifted flour
1/2 tsp. salt
1 tbsp. baking powder
1/2 c. milk
1 c. blueberries

Cream butter in 1 cup sugar. Add eggs and 1 tablespoon of lemon juice. Mix well. Sift flour, salt and baking powder. Add alternately with milk to creamed mixture. Stir in lemon peel and blueberries. Bake in well greased loaf pan at 325 degrees for 1 hour or until golden brown.

GLAZE:

1/3 c. lemon juice
1/4 c. sugar

Mix lemon juice and sugar - use a toothpick to make holes in top of cake and drizzle lemon glaze over warm cake.

Now, my neighbor has a recipe for blueberry pie, and he's bringing that to me as well. I want to make a pie for this week and maybe can some filling for the winter if I like it!

You folks are keeping me sane today! I'm fasting for some tests tomorrow and I am living vicariously through you.

Sandee those breads sound DELISH too! I would loo-ove a nice chunk of warm bread right now with some fresh garlic butter.

Fair warning on my cake, it took longer to bake, and even though I tossed the blueberries in flour before folding them in the batter, they sank to the bottom and made it soggy.

So up the heat to 350, and cook and extra 10-15 minutes in a large bread pan. Use half the blueberries, and probably mix in AFTER they are in the pan since they'll go to the bottom.
