What are you baking now?

Most of you know that we are way into this Dutch oven bread thing. Well, it has to ferment for 16-20 hours so I'm trying to figure out how I'm going to get some done for Thanksgiving. Usually I start it on Friday night and bake off on Saturday. Well, with working and my husband still out of town looks like I have to get up at 3:00am to put it together so it will be ready for the second rise when I get home Wednesday night and bake it off before bed.

The things we do for fresh baked bread! At least I have two Dutch Ovens and can do more then one loaf at a time.

Well today we are making a birthday cake for my Mom, who is turning 42 today. So between the 10 kids and Dad, she should get a good birthday today. Add to that Grandma making her fave meal for dinner, and the chocolate she gets for a present, and the coconut-with-lemon-filling cake, and you get the best old person B-day EVER!!!!!

I've been so busy the last few days figuring out how I want to build my outdoor kitchen that I haven't had time to visit BYC forum. But I have come up with a mental plan that includes a sink, grey water return for garden, mass heater rocket stove with heated bench (for winter use), pizza/bread oven, 2 charcoal fired BBQ's, (one with a rotisserie) , and plenty of counter space. It would have a corner chimney and everything would be built in. Wood storage underneath and ice box with drain to hold drinks. Most of it can be built with rocks, clay, sand that I can collect from the wilds. I'll have to buy or scrounge straw, fire bricks metal pipes and portal cement. I'll hold my son's X-box hostage in exchange for operating the shovel part time. Now the ball is about to roll.

All this talk of homemade bread is making me want to hit the kitchen and bake some of my own.

Today I made oatmeal raisin cookies with sweet potatoes and honey mixed into the dough. Used 1/2 whole wheat to absorb some of the excess moisture and added extra oats to absorb the rest. They were good for healthy cookies but I like the sweeter regular ones a little better. Still, not bad if you're limiting your sugar intake.
 
Used the recipe on the back of the Nestle Tollhouse Mint & Chocolate chip bag (special for the holidays), and made chocolate mint cookies. They are very yummy -- there are mint chips and dark chocolat chips. Yum! Yum!

I told the hubby that I love going to the grocery store right now to see all the specialty baking products out there for the holidays. Now the busy-ness of the grocery store at this time, I don't love so much! Happy baking!
