What are you baking now?

MY MANGOS! Do you know how hard it is to wait for the dryer to dry all that delicious mango?
 
I made this the other day. I was in a hurry and didn't see that it was supposed to make 2 loaves, so it was HUGE. Tasted great though, it has cheese, onions, bell peppers in it. (supposed to have jalapenos too, but my kids don't like them, so I left them out) I thought it was delicious!

Next time I'm going to take the base recipe and alter it for pizza bread with my canned stewed tomatoes, basil, mozzarella cheese and pepperoni pieces.

Before baking and that's a large cookie sheet, so you can see how big it is:

I love jalepano/cheese bagels from safeway toasted w/cream cheese. I wish I could get my bread to rise worth a darn. I just made gump bread last night and it never rises very much. Does anyone else have this problem? What can I do different?
 
How stiff is your dough? Stiff doughs are dry doughs and they don't rise well. You may want to add a touch more water.

Also, how well have you kneaded it? Poorly kneaded dough also does not rise well.

I actually did add a bit of water right before the first rise. Then kneaded it for like 5 min and rolled it out to shape. But have to add flour so it is not sticking to everything. Then let second rise and baked it. Each rise I did at least 25 min. This is gump bread I made last night. The logs look like baguettes kinda maybe a touch bigger.​
 
Last night I made chocolate cookies w/peanut butter chips and they stayed soft/chewy. Really good I have ate to many for breakfast.
 
I made some black forest brownies with walnuts & dried cranberries... we used bitter sweet chocolate & dark chocolate. It was pure sin in a pan
