What are you baking now?

I made Blueberry Bread this morning and now I have a Challah Braid doing it's bulk rise on the counter right now. I have a chicken thawed out in the frig that I need to figure out what I'm going to do with it for supper tonight.

Note: This makes one loaf but I use two pans to make thinner bread. My husband thinks the crust is the best part and the thinner loaf gives him more crust.

Blueberry Bread

1/2-cup butter
1 (8-oz.) package cream cheese
1 1/4 cup sugar
2 eggs
1-tablespoon vanilla
1/2-teaspoon vinegar
1/4-cup milk
2 cup sifted flour
1-teaspoon baking powder
1/2-teaspoon soda
1/4-teaspoon salt
8 ounces frozen blueberries

Mix the margarine and cream cheese in a bowl, cream well. Add the sugar gradually and cream well. Beat in eggs, one at a time. Add the vanilla and vinegar to the milk and mix well.

Stir dry ingredients together. Remove 1/3 cup of flour mixture from the bowl, remove blueberries from the freezer and place them in the bowl with the removed flour mixture. Stir well to coat the blueberries with the flour.

Beat the remaining flour mixture and the milk mixture, into the creamed mixture a little at a time beginning and ending with the flour. Fold the remaining flour and blueberries into the batter just until combined.

Turn batter into a well-greased and floured loaf pan and bake in a 350° oven (325° for dark, coated, or glass pans) for 1 hour (I start keeping a close watch at 45 minutes). A toothpick inserted into the middle of the bread will come out clean when done.

Just got my new food processor...bless his heart the UPS man WALKED all the way up our drive to deliver it! We live 3/10's of a mile through the woods and down and up a very steep ravine/holler to get to our house. I was very impressed. I chased him down though and told him to make future winter deliveries to the neighbor's house. Our driveway is all iced over and you can't get in or out unless you have four wheel drive. This man walked and I am so darned impressed!!

BettyR next time use buttermilk if they call for water or regular milk, it will make them more moist. I also fill mine with a vanilla custard (or use a thick pudding). They are to die for! And of course cream cheese frosting with real vanilla beans.

chicks4kids thank you for that recipe!!! I've not had an oreo cookie since I gave up transfats (I will use all butter for the filling instead of shortening). Now I can indulge again!

Banana Blueberry Bread--This is a many, many years in the making family favorite for my family... incredibly moist...

1 c. sugar
1/3 c. butter-soft
2 eggs
3 ripe bananas
1/3 c. water
1 2/3 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/4 tsp. baking powder
1 ziploc snack size baggie blueberries...or 1 c.

Mix sugar and butter. Then add eggs. Mix. Then and bananas and water. Then add flour, baking soda, salt and baking powder. Add blueberries last. (They can be thawed or frozen-doesn't matter). Bake at 350* in a greased and floured pan for roughly an hour. Makes 1 loaf.

chicks, I made this last night and it was DELISH!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! Thanks for the recipe! It's going in the permanent file today!

I am making biscotti today. I made it for the first time at christmas and everyone really liked it. So I am going to do it again.
