What are you canning now?

I just finished making a batch of Wild Blackberry Jam. There was a bit left in the pot but I ran out of itty bitty jars so I left it sitting there while I water bathed and cleaned up. The bit left in the pot set up real nice so I scooped it into a jar and so far we've had some on toast and some on ice cream....YUMMMMMMMMMMMMMM! I hope I can get enough wild blackberries picked to make another batch :)

Your welcome! I use that site for most of my recipes, like BYC it has a huge member base and I usually always find what I am looking for.
I wish I had a plum tree that is one of my favorites.
I made up some fabulous four (black, straw, blue, and raspberries) last night they jarred up so pretty.
I love this time of year, all the fresh berries, we are not quite ready for produce here yet.
KimNC I love chow chow, you will have to post your pics.
Keep them coming everyone I get so inspired to overheat the kitchen and slave over the stove for beautiful gems in the pantry

anyways we are wanting to make Banana Preserves and we need a recipe.....a great tasting one. So, if you have one can you please post it, preferably one that you have tried and liked.

Thanks and oh, next week we are going to be making more relish, zuchinni and squash relish.....YUMMY!!!!!

I started making this one a couple years ago. I sell A LOT of it and have repeat buyers. It's great as a jam or an ice cream topping.

Banana Jam

4 cups bananas, mashed
1/2 cup lemon juice
1 box Fruit Pectin
1/2 tsp. butter or margarine
6 cups sugar, measured into separate bowl

Put bananas in a saucepot. Stir in lemon and pectin. Add butter, if desired. Bring to a full rolling boil.

Frogdogtimestwo - those are beautiful in the jar.

Stir in all sugar. Return to full rolling boil and boil hard for 1 minute, stirring constantly. Remove from heat. Skim off any foam with metal spoon.
Cover with two-piece lids. Process 10 minutes in WB canner.

For the Banana Jam, do the bananas have to be super ripe? (dark) or just ripe?

Honestly they were given to me by a lady that was moving. I have not seen them in stores either.

Just ripe, Michelle. I don't use over ripe or dark bananas for it. Your blackberry jam looks really nice.

I ended up making 7 jars Blueberry Jam and 9 jars Blueberry/Peach Jam yesterday. I forgot there were 1.5 gallons of wild plums in the fridge I had gathered Fri & Sat, so I went through those and steamed them into juice for jelly making. And we had some cling peaches leftover from Saturday morning's market, so I juiced those yesterday for jelly making too. I still have to make the jellies.

Hope to get to the Chow Chow today. At least cabbage keeps in the fridge well, no worries. First we have 75 chickens to load up and head to the processing plant this morning! Never a dull moment.

Oh, and mulberries have been calling my name for a week. Hope to get some of them gathered in the next couple days.
