What are you canning now?

This is my first year as a canner. My mom canned when I was growing up and I would help her sometimes, but mostly as a gopher (go-fer this, go-fer that). This year we put out a garden and have bought some fruit as well. So far I have canned 4 runs of Blue Lake green beans and frozen 4 qts of peas from our garden. From the fruit we have bought, I made 31 cups of peach freezer jam and 60-some cups of strawberry freezer jam.

I'm planning on making raspberry and blackberry freezer jam as well. We will soon be having corn from the garden and that will be going in the freezer. I take a lot of pleasure in eyeing my few jars of beans on the shelf and knowing that I was responsible for them from seed to jar.
 
I gave myself a job for early tomorrow morning.

We picked up about 1/3 of a bushel or more of snap beans. I snapped them all while watching a movie. I am going to bed and will be up bright and early to get those things canned before 9am. I am hoping I have enough for 18 - 20 quarts since I have bunches of tiny potatoes to add to the jars.

I love this time of year here on BYC seeing all the beautiful jars of things people can. Have also been missing some of the folks who were here last year during canning season and hope they return.

Husband is picking more Boysenberries this morning. Have to go and get about 4 cases of jars on the way home tonight - then do a Costco run so we can stay on the property and get all our chores done. That includes making a ton of jelly. Going to do my Mulberry/Boysenberry blend that I tried last year that was so good. The depth of flavor was so rich.

I am planning on making some rose petal jelly today... the sun is shining and my red fragrant roses are blooming all over the place!!! I am also picking clover before the kids show up for the bday party tonight.

BTW... does anyone know if I were to just make the 'flower tea' that I seep for my jellies if I can just freeze any extra of the liquid so I could make jellies from it later on, like in a few weeks or months after the flowers have stopped blooming!??!

What I can't find a use for right away I grate it up and freeze in one cup increments. Then I can have fresh zucchini bread year round. Last year I also added it into canned relishes, it is easily disguised in foods

my kids never knew they were eating it half the time, think chocolate zucchini muffins, lasagna, etc.
