What are you canning now?

Yeah, Walmart is getting cleaned out of jars and lids pretty quickly now. Big lots has had them in my area. But then they had sold out of the lids I needed. I still have some empty quart jars. Debating if I should buy another half bushel of tomatoes to do next week. I think this will be the last week I can get the good locally grown ones that haven't been sprayed. I really hate to pass them up. DD has done another 15 jars of dill pickles. Yum-oh-yum-yum-yummy!
 
Our local orchard has them still. TSC has been out for awhile. I just bought 24 pkgs of lids and bands for a buck a pkg at the dollar store. Ball brand regular mouth. I can't even get lids for that. I'll have plenty for awhile:)

Cook pears until tender- DO NOT add water. Add other ingredients and cook until mixture is thick. Pour into jars and give WB for 10 min.

I don't crush my pears-- I just cut them into small chunks.
It comes out such a pretty golden color.
 
yesterday, 9 jars of green tomato relish. But that pear honey sounds really good and I have all the ingrediants and a couple of jars and lids left. Im still debating some sour cherry liquer. Anyone have something interesting using cranberries? I just love them.

Yesterday I did 30 half pints of applesauce. My son refuses to eat any because I put cinnamon in it! Today I did 16 pints and 9 half pints of green tomato relish. I've never eaten it before, and definitely never made it before! We'll see how that works out.

Tomorrow will be plain applesauce for Junior.
 
Has anyone ever canned "Pesto Sauce"?? I have a ton of Basil & would love to use it in Pesto Sauce for Christmas presents. Everything I have read says "no" to canning, as it has fresh (fresh uncooked herbs) & oil. If you can buy it at the grocery store, why can't you do it at home? I have an "American" pressure canner. Any suggestions???? Thanks~!!!

However, industrial canning is very different then home canning. Maybe someone can explain how the commercial industry does it?

I'm freezing mine, too. However, I'm running out of freezer space

Also, I want to make up Christmas Baskets with everything else I have canned & Pesto Sauce would be a great addition. Hope someone else has an answer for both of us
