What are you canning now?

Mine suffered earlier in the season or I would have had a LOT more. I thought it was going to be an amazing basil year the way it started out. I make it throughout the summer (every other day typically).
 
We had 5 plants, I did a last minute planting in August and because of the long hot weather... they thrived enough I have 6 extra plants... small plants mind you, but a lot of extra! I'm going to do the freezing in ice cube trays, and then dumping them in zippy bags. There was a thread in the recipe section I started a week or 2 ago about how to do the freezing of the pesto.
 
krcote, so sorry you lost your basil. That's sure is heartbreaking. Maybe you can buy some.

Well, I bought a peck of tomatoes, should do another 6 -7 quarts. They look like they'll last until I get to them next week. DD also wants me to buy the ingredients for Kale Soup since I keep saying I want to fill every jar I have. Funny, I was listening to Glenn Beck on the radio this morning and he was talking about canning as a lost art. Ummm.... I guess he hasn't stumbled across this thread yet! So interesting to hear about what you all have been up to! Keep up the great work!
 
I saved that website. Did you see the recipe White peach and ginger jam? We don't get white peaches here, but either way no peaches this time of year. I saw cranberries some place last week, but don't remember where.

Yesterday I canned some Hot Dilly Beans, some jalapeno and banana pepper rings and one jar of very hot mixed peppers that contain cayenne peppers, jalapeno's and some very very hot black pearl peppers...

I have never seen black pearl peppers.... I think they are gorgeous.


This week, probably friday when I am DONE with fair stuff I am going to try my hand at making Mulled Apple Sauce... I'm taking my Mulled Apple Cider and turning it into a snack rather then a drink. I'll let you all know how it turns out.

I have three basil plants. Need to do somethink with it before it freezes any thoughts recipes etc. I planted it because someone suggested but don't know what to do with it . I've taken good care of it . The plants are 3 feet tall. Its now like a bush. Thanks 7L Hate to waste.
