What are you canning now?

I did 6 quarts of apple pie filling last night. Next up is caramel apple jam and applesauce.


vfem........I think it was you that mentioned you can use the apple rinds for something. Can you refresh my memory? I put them in the fridge last night.
 
Thanks for replying. I knew that she uses them to make pectin, but my mind was thinking something about apple jelly? Not sure how, which is why I was asking. It's probably too late, the apples rinds are already turning brown. Maybe next time.
 
1st time doing pears!!!

7 qt pear juice
14 1/2pt pear butter
14 pt pear filling (for pie, homemade poptarts, cobbler, ect
7 pt pears in light syrup
2 qt pear sauce(like applesauce)

I used my juicer and left peals on for the apple butter , filling ect. then just reconstituted them in the crockpot and canned the left over juice after straining it.

YUMMMYYYYY!!
 
Tomatoes everywhere! Well, tonight was MORE tomato juice and tomato paste. Last years disaster with the tomato plants had my cupboard bare and now I am still canning like crazy. Only bad thing is we are eating stuff pretty quick so I am having to restock the essentials like paste and juice! No complaints, it is just time consuming!
 
Well, I had some pears left over, some fresh ginger from the nursery, some lime juice, some lime peel...and I made some homemade apple pectin...and I do not know what it is, but it isn't lasting long.
I grated it all on the grater, pears and ginger. It will all be gone by the end of the month.
I should have paid closer attention. I am not sure I can do that again.
It was a 'just get it all over with already' kinda deal.


...and then I found another mesh bag of pears on the back porch. It still isn't over.

...AND the goofy pear tree is in BLOOM again. so I guess I better not let these last pears waste, because there won't be any next year.

Just boil them just covered with water... strain... measure out 1 1/2 cup sugar to 2 cup juice and you have apple jelly. The fresher the firmer the set. If you want really firm add more pectin.

I have 4 gallon bags of apples cores and peel in the freezer for pectin and jelly.

Last week I made Deuce some stuffed bell peppers and used it instead of regular tomato sauce and he LOVED it!!
 
Thanks VFEM for YOUR famous applesause recipe sounds great, that's my next day off. Just got throught with 20 lbs. of figs not quite how I wanted them but they smelled great going in also did 8 pints of bread & butter pickles with a kick (jalapeno) those should be fabulous we like hot and garlic. Next on to the apples and some dilly beans made with soy & green beans I think, not to mention those sugar pumpkins.
