What are you canning now?

we bought a home and there is a room that i would like to make into a pantry which has windows in it and is facing the east.So my question is after you can food would you have them in a dark room without windows or have them in a room with windows. then i will decide to pick up dark curtains or light curtain to cover up the windows. thank for you info

I don't have a room without windows so I bought a white cheap cabinet at walmart and put it in my dining room and store jars there. last yr I stored them in my biggest cabinet under the counter but that was a pain in the but to have to reach in and pull out everything but what I wanted lol. I do plan on making a pantry eventually but gotta have the money for lumber and such first lol..

JUDIES CRANBERRY SAUCE
It comes out like jam

1 lb [pkg]fresh cranberries or frozen fresh cranberries
1 cup orange juice i used fresh squeeze oj
2 cup white sugar
1/2 tsp nutmeg,
1/2 tsp cardamon[ if u can find it]
2 oranges, peeled and chopped
1 cup chopped nuts [optional]

mix ingredients [except nuts]in sauce pan boil,bring it to boil, stirring occasionally.Reduce heat to simmer for 10 minutes or until the cranberry are soft and popping stirring more often [stirring continuously]. take it off the heat add nuts at this point cool to pour into sterilized jars.refridg or canning

note:
if you have orange or tangerine trees you can use either of them for the oranges

this year i am going to try add 2 chopped in apples with skin in the mix

i am having open shelves in there it the room is some thing 6 ft by 12 ft
 
I work in the layer houses at my school and we sell eggs every week at the local farmers market. I went last week to help and a lady came to purchase eggs. She was eating a small, oblong fruit and gave us each one. She told us they were Feijoa, or pineapple guavas. I will try anything once and it was good! So I went to the booth that was selling them and the lady asked me if I was with the college. I told her I was, so she gave me a whole bag for free. She said they made good jelly, so guess what I did with them? Yes, 1 pint and 2 half-pints later, I have jelly that looks like the T-rex urine from Jurassic Park 3.

I also had blueberries in the freezer and I didnt want to use the canner for just a few jars, so I made 3 pints and 1 half-pint of blueberry jam as well.

Any I've been busy trying to get some orders together with my husband's help. I am exhausted right now as well.

I have the cranberries and I want to try it... I just need to get my strength back. I'm hoping to start getting my Christmas orders in the next week, and I need to hit the ground running HARD asap. Which means if I don't have this recipe done by Friday, I may not get to it this year.

So if someone else wants to try it and give us the low down on how good it is.... PLEASE DO! It looks so yummy... I wish I could have done it by now.

Funny that you mention this - as I just looked at four bags that I have in the freezer this weekend and need to make some jelly myself. I love my food mill for mulberries so I get nice clear juice. It is also great mixed with 1/2 and 1/2 with blackberry or boysenberries.

Ok, I made it, but I changed it to fit what I have, and my likes. I am VERY pleased with how it came out. Its in the waterbath now!

4 c fresh cranberries
1 1/2 c sugar (I use sugar in the raw)
1 c water
1 tbsp chai spice mix (cinnamon, cardamom, ginger, cloves, ect)
2 Large Rome apples cored, chopped (skin on)
1 medium yellow onion chopped fine
1/2 c golden raisins
1/4 c regular raisins


Directions:

In a large stockpot, combine cranberries, sugar, water, & spices. Bring to a boil over medium heat, stirring frequently to dissolve the sugar. Cook until the cranberries begin to pop, about 10 to 12 minutes. Adjust the heat so the mixture simmers.

Stir in apples, onion, and raisins. Continue to cook, stirring frequently, until thick, 15 to 20 minutes longer, remove from heat.

Pack into sterilized half-pint jars, and follow your favorite directions to process in boiling water bath canner. Makes 6-7 half pints.
