What are you canning now?

Have apple and tomato chutney on the stove now... the whole house smells like curry. This is definitely new for me. Husband left though, he is not enjoying the smell... he had a bad experience with Indian food!

JUDIES CRANBERRY SAUCE
It comes out like jam

1 lb [pkg]fresh cranberries or frozen fresh cranberries
1 cup orange juice i used fresh squeeze oj
2 cup white sugar
1/2 tsp nutmeg,
1/2 tsp cardamon[ if u can find it]
2 oranges, peeled and chopped
1 cup chopped nuts [optional]

mix ingredients [except nuts]in sauce pan boil,bring it to boil, stirring occasionally.Reduce heat to simmer for 10 minutes or until the cranberry are soft and popping stirring more often [stirring continuously]. take it off the heat add nuts at this point cool to pour into sterilized jars.refridg or canning

note:
if you have orange or tangerine trees you can use either of them for the oranges

this year i am going to try add 2 chopped in apples with skin in the mix

I use chutneys over meat, and sometimes if a recipe calls for it (usually a marinade) so I am not sure if I would like it used as a jam or whatnot. I just need to get this made it sounds delish and I am a big cranberry fan.

been awhile as I took a hiatus from all the canning to focus on finishing our horse show season (which went well by the way) and start showing our chickens as well (starting off good too!).

ANYWAY, my pie pumpkins will be ready any day now and have no clue what to do with them.

Yay, I just finished canning more jalapeno jam. 2 more batches for tomorrow and I'll be done for the holidays. Then I have to make pineapple habanero.....I went to 3 different stores today and only found one package of jars. I'm going on a scavenger hunt tomorrow to find more! I need about 5 more cases! lol

Heres the jalapeno jam I made. It has more of a kick than usual, but that makes it even better. Spread it over cream cheese and dip with ritz crackers...aaahhh so good!!

I need to get busy .......... I've got apples waiting for me to make up some caramel apple jam. And I need to run to Sam's Club to get some cranberries so that I can make up some whole cranberry sauce to can. Happy canning everyone!
