What are you canning now?

I also have the American Pressure Canner, which I LOVE

When I first started using it, I also experienced leakage. I realized that the lids on the jars must be screwed on super tight because of the pressure. Now that I have adjusted the lids, I never have a problem. Good luck, you will enjoy this canner soooo much~!

Well I found some pickling cucumbers yesterday at a roadside stand, bought all she had. Just started another batch of fermented dill pickles

Asked her to give me a call if she got more, I'll can a few quarts for the trip, not the ideal but these are just awesome.

Still pondering what to do with the peppers, landed some pomegranate juice yesterday for jelly, got a steal on more mushrooms and just got a call that the raw peanuts are in........

I think I'm going to be busy enough for the next week not to be stressed over this move! Or I should say the lack of finding a place to move into!

Canning my last batch of cranberry conserve and slipped on one of the oranges and sliced my finger! Just lovely. The green tomato relish has mellowed for about a month and doesn't taste like so much onion anymore. Mine is crisp but I also added some coloring to it , it was so washed out and yucky looking and now it is sorta neon. Oh well kids love to eat anything that has an unatural look to it.

I've never seen the canning thread so LOW in this section! LOL

Anyways, I thought I was done canning, but I had frozen watermelon juice and someone just contacted me about 5 jars for Christmas, so off to make some watermelon jelly again.

Last weekend I managed 5 1/2 pints of Raspberry/Cranberry Preserves. I wanted to make another batch but ran out of honey. Got some more honey from a friend of mine so need to finish up this weekend. It will be a challenge since I'm doing all the floral arranging for my boss' daughter's wedding and have a bunch of things to get ready for that. But as we all do - I'll just have to manage it!

It does seem like we are getting to the end of the season

I have a question/suggestion: in January, can we start a new thread "2011: What are you canning now?"

It gets harder and harder to find stuff you're looking for on here as this gets to be several years long, breaking them up by year might make it a little easier??

3rd that but we should pull all the recipes off this thread and post them on Terrielacy's thread. Someone started it a while ago but I don't know what post # they ended on. We could all take like 25 pages or so, link the recipes and send them to her.

That would make it much easier...I am so bad at finding the threads where the recipes are posted! I really like the cookbook idea too. But then as soon as it's printed it is out of date! So many recipes, so little time! Terri O--still waiting for HM pectin to jell up the herb infusion....
