What are you canning now?

I've had DRIED mango before and it is wonderful!

I used to slice it into slabs, put a popsicle stick into the slab and freeze them on a cookie sheet. You get a wonderful lo-cal sweet treat.

I like darker jams to have powders, and lighter jams and jellies to use liquid. It helps against cloudiness... they all look super clear with the liquid. (Things like berries don't matter, too dark to notice if its cloudy or not.)

1 pouch of liquid is like 1 packet of powder, even swap!

No suggestions but my favorites I have made are with sparkling dessert wines, moscato and sweet reds and not once in the 5 or 6 bottles I have done did they taste like grape jelly

Well, lets hope more of the wine ends up in the jelly then my mouth then shall we?! LMAO

Hooray, knocked out the wine jelly finally today! I did a Duplin Co NC Muscadine Pink Blush... its soft and light and very delicious. I'll have to do a robust red next.

I also got a few more jars of clover done... but my clover has slowed blooming it appears and I'm having a hard time getting another 2 cups.

My Great Aunt brought over some Prickly Pear juice she extracted this summer, I need to get some jelly made up but my kitchen still looks like a war zone from the remodeling going on!

I would love a remodel... but absolutely couldn't do it until it was between the months of Jan-March. Other then that, I'm using that kitchen 6 hours minimum out of the day!!!

Usually, its more like 12!

Hubby just brought home a bottle of Magnolia wine... OMG! YUM! This may not make it to the jelly pot. Duplin Co ROCKS!

How does one make magnolia wine? the flowers? to me they have a lemony scent, but I am having a difficult time conjuring up the flavor. please describe in further detail. I enjoy making wine, and if i blow a gallon of something nasty it isn't a big deal.

I have not had clover yet. I was looking forward to trying the jelly. Maybe it was early and I just missed it while I was sick.
I thought it lasted all year when I was a kid, but days last forever when you are a kid too...except Sunday afternoon.
