What are you canning now?

I canned for the first time last night.

I made 10 pints of dill pickles.

Next up, jams. My mom made tons of it growing up and sold it. I hope mine is as yummy.

I will be doing my first canning in a few months - -- any advice from one newbie to another?​
 
Just get the right supplies, and plenty of it! I watched my mom growing up and I always thought she was slaving away all day making jam, etc. (OKay..she was...but she was making hundreds of jars to sell!)

Now that I have made some jam and pickles, I feel more confident to try other things and eventually get a pressure cooker. Doing a regular batch of jam using a Ball recipe only takes about an hour and clean-up isn't bad. 1 bowl, 2 pots and canning instruments.

My first batch didn't set up very well at first, and I'm pretty sure it was b/c I fudged the recipe and "made it up" a bit. LOL Now I know that doesn't work and the 2nd batch I followed to the letter and it set up great!
 
Thank you Shannon, the dandelion jelly turned out great and the color is a beautiful yellow!

Have enough left to do one more batch tomorrow, oh have I missed canning!

I have some dandelions and violets soaking right now to make some jelly tomorrow. If I have enough to make a second batch, can I freeze the tea to use at a later date?

I freeze and save flower teas for late season jams all the time!

I have now also managed to make 8 jars of strawberry jam, and 6 jars of strawberry lemonade jam. YUM! Next, strawberry banana jam.

You guessed it.... I got 2 large buckets of strawberries and they are finally rolling in here in our area!!! HOORAY!!

I made some Apple Berry jelly and Apple Spice Conserve. The conserve is pretty kick booty, and I just sort of made up the recipe and it worked out. It has apples, spices, pecans, orange zest, lemon juice and even rehydrated prunes. LOL

Next up applesauce!!

Ummmm, can I have the Apple Berry jelly recipe? Purdy pleez? Sounds sooooo yummy!​
 
Strawberry lemonade is simple, its the 4 cups of crushed strawberries... juice and zest of 1 large lemon.

Strawberry banana is 3 cups of strawberries cut up and 1 1/2 large bananas all mashed up together. (+ Juice from 1/2 a lemon)

Bring to a rolling boil with 1 package of pectin for a minute, add 7 cups of sugar and bring back to a hard boil. When jam sheets off your spoon ladle into sterilized jars and waterbath for 10 minutes to seal.
