What are you canning now?

It is not like fresh, but when you don't have fresh, it is good enough to eat.
I was a strange child and even though we had fresh citrus, I liked canned citrus juice.

The sections are good, a different texture than fresh, but I guess you have to think of it like apple butter or dried fruit. They are something else unto themselves other than a fresh apple.

Thank you and KDBeads for your response. I had found that pick your own site and was encouraged that at least the technique was out there but I had never heard of anyone doing citrus. I buy the canned pink grapefruit and lust after the jarred fruit and then it hit me. Waaaaaaaaaaaaaaait a minute. Cans, jars, this is possible! Glad to know it's possible by mortals and not just large factories. I'm taking my canning class tomorrow and will most certainly put up some grapefruit when it's trippin' over grapefruits time. I love them but not every day and would most certainly like them even more when they're not in season!
 
Hey everyone, I'm new to this thread and reading the zillion pages it contains, but I need help with summer squash.......... I planted the white scallops this year that went nuts, and I have a gozillion of them, I have no room left in my freezer, it's full of chickens and other veggi's. So I want to can them..??????? has anyone been suspenseful canning them and how long in the pressure canner, I have found various times from 40 minutes to an hour and a half, the USDA doesn't recommend canning them at all, because no one can figure out a safe time to kill the bacteria?????????? argggggggggh those people can never make up my mind. My old recipe book from mom says can them for 85 minutes.... does that sound right and Raw pack or hot pack? HELPPPPPPPPPPP PLEASEEEE, got squash coming outa my ears. TY Kim
 
6 quarts of pickled hot peppers, 6 quarts of applesauce, 10 quarts of carrots.................still have to can 10lb beets, 10lb carrots, 8lb cukes, and 60lb apples =/ MIL got me a pressure canner for my birthday!! YAYAYAYYAYAYAY! Oh and 8 quarts of tomato sauce!!
