What are you canning now?

I've not canned in 30 years and just got back into it this year. Biggest problem was finding jars that didn't cost an arm and a leg! Seems that canning jars are now popular for weddings and crafting so they're not as inexpensive as they used to be. Got lucky with friends cleaning out basements and thrift shops. Thankfully!

I don't have a pressure canner so my options are limited. Have done sweet pickle relish and kosher dills so far. Am on the hunt for small peaches to make pickled peaches. Will also be doing tomato's when all my plants start producing.

Will keep an eye on this thread for more canning ideas!
Goodwell here has canning jars all year, so I buy through out the year..

Check on the fruit you are using to see if it has enough natural pectin. You don't want the jam or jelly to set too hard! Sometimes you can use less than the instructions say too.

I have 12 lbs of cherries still with pits..i dont have time to make them into Anything for
A bit...how would younstore them...can you just pit and freeze them...or do you have to pit them...blanch them and then freeze?
 
I don't use pectin in any jams I make. Just fruit and sugar and cook to the gelling point.

My mom always said that pectin was just to make sure the jelly set. You really don't need it.

15 quarts of pumpkin puree cooking right now. I can't wait till the weekend when I have 500 lbs more pumpkin to do. I had to buy out all the jars the 2 local walmarts had. They are either going to love me or hate me in the next month when all 40 tomato plants start turning

What does your walmart charge per canning jar case!?
 
I thought you were not supposed to can pumpkin? Even with a pressure cooker.


If you want to see fast with whole tomatoes, watch them go through a champion juicer!
 
The ball book says that you can can 1/2 inch cubes. I did it, but they ended up tasting...scorched? Over cooked or burnt, or something not worth doing again.
I wanted to make pumpkin butter, but I was warned off of it.
