What are you canning now?

The ball book says that you can can 1/2 inch cubes. I did it, but they ended up tasting...scorched? Over cooked or burnt, or something not worth doing again.
I wanted to make pumpkin butter, but I was warned off of it.

I thought you were not supposed to can pumpkin? Even with a pressure cooker.


If you want to see fast with whole tomatoes, watch them go through a champion juicer!
You can cube or puree pumpkin. cubes add 1 tsp salt and cover in boiling water, if you puree then add nothing just process 90 mins(quarts) for both @ 10lbs pressure. This is the third year in a row and never had a problem. We use it all year for bread cookies, cake and pies.
 
Between $9 & $11 a case. In case anyone is wondering 50lbs makes just over 15 quarts.


Thats how much they are here but Im too cheap to pay that much! Lol i wait until they are on sale and i use the coupons..i pay isually 6$ a case or hunt craigslist everyday and wont pay more than .25 a jar...its a game for me to find them cheap :D

My mom works for a hardware distributor (they sell to hardware stores). So I usually get my jars through her at a wholesale price. About $6 per case. More often than not, she doesn't let me pay for them and says that I can just give her a couple jars of whatever I make (yeah, because I wouldn't give her jars anyhow

Silly mom!) I hunt craigslist often too. Haven't found much this year, but I scored really big last year! All my coupons have now expired...didn't get to use that many because they didn't go on sale. At least I saved more than I paid for them.
 
Nice Holyhart!!! I have a feeling Ill go through the majority of mine this year..50 cases? Im always on the hunt for the "big one sale" Im already starting to get behind...i have tons of black and red raspberries to pick tonight and peaches and cherries to deal with...I believe its supposed to rain this weekend so I might freeze everything and do it this weekend...I dont want thenfruit gettingnover rippened;(

$6 a case NICE. I tried CL once for jars drive the 20 mins up there and they had 50 jars 40 of them were cracked and the other 10 were the old school jars that use the rubber rings.

15 lbs of cherries in freezer...I made my 13 yr old pit all of them :D shes owes me bigtime this week lol
