The ball book says that you can can 1/2 inch cubes. I did it, but they ended up tasting...scorched? Over cooked or burnt, or something not worth doing again.

You can cube or puree pumpkin. cubes add 1 tsp salt and cover in boiling water, if you puree then add nothing just process 90 mins(quarts) for both @ 10lbs pressure. This is the third year in a row and never had a problem. We use it all year for bread cookies, cake and pies.I thought you were not supposed to can pumpkin? Even with a pressure cooker.
If you want to see fast with whole tomatoes, watch them go through a champion juicer!
