What are you canning now?

Quick question. I made some pear jelly this morning - and I used liquid pectin. I boiled the peelings and cores to get the liquid. I measured everything carefully and followed the directions - but it has not jelled yet. Still looks pretty much a liquid. Any recommendations on what to do? I'm heading out on some errands - so I'll check back later tonight for replies. THANKS!!!
 
Just finished some lovely Mint Rosemary Jelly.

Oddly my mint turned a tad brown when I was making the infusion (Apple free jelly) but it still turned out nice and tastes POW!

Mine has done that but after a few days..it jelled..if it doesnt after a week I reprocess it all anf add more pectin and cook a tad longer

Imwas thinking the same thing!!! Holy hotness I put 6 huge peppers in mine..lalapenos in 12 lbs of salsa..Im a sissy pants I guess!! Lol
I like salsa hot. My DW and her family like mild so thats all they buy, so i make my salsa HOT!!!!
 
Im looking for a good hot salsa recipe. I Also have the mrs wages salsa mix. We did 11 quarts of tomatoes from pray that was one box of romas. Also did 7 quarts of dill pickles 3 of which have cherry hot peppers in them. Still got another box of romas to do tomorrow. Still got my own in the garden too. Hopeing to can 50 quarts of tomatoes altogether then some salsa and chili sauces which are amazing. Plus aloota jalapenos to can also.

Since I couldn't find any clear gel around and don't really have the time for it to be shipped, when I stumbled over some Mrs. Wages pie filling mix, I bought all 3 packets they had left. I still have 3 buckets of apples to get through from last weekend and I'm going to get more this weekend. All free

So far I've gotten 7 pints of spiced applesauce, juice for about 4-5 batches of jelly and some frozen for pies. Next up is more sauce, juice to drink, cinnamon wedges and the Mrs. Wages pie filling.

I also got 25 lbs of concord grapes for $10. that has given me 1 1/2 gallons of juice for jelly. I'm going after 2 more buckets next week for juice for drinking.
