What are you canning now?

thx gang. i just brought in a huge amount of veggies from the garden.
i need a good salsa and banana pepper (like for subs) recipe. anyone got one??
i am gonna use the search feature for one as well.

Try recipezaar.com for recipes - they've got some really good ones. Do make sure that the recipes follow safe home-canning procedures, though, as I've noted that some don't (i.e. one suggested BWB canning seafood... never EVER a good idea).

Another good source for recipes with all kinds of reviews is All Recipes.com I always look for the highest rated ones and read the reviews.

Oh yeh! Got my vanilla beans on Friday. I ordered on Tuesday really fast and beans look beautiful. InisdeArt did you get yours? So going to get that started today. I bought the sampler pack so going to make two separate batches to compare and may be one with a blend.

Also, picked the rest of our peaches this morning. So need to get going on salsa and jam.

so in order to pass away the lonely time I'll be doing a lot of canning. Boy I miss him like crazy - guess that is what happens when you love someone as much as I do him.

I did receive my vanilla beans already. And they look great. I'll have to make a special trip to the county line to get some vodka to make the vanilla extract. Will make great Christmas gifts.

Worked on grape jelly yesterday.
 
Hello! I have a bit of a dilemma in the form of 25 pounds of green beans that I want to can and NO pressure cooker. I just now realized when I went to find directions (never canned green beans before) that I need one.

Does anyone have a green bean recipe to share that I can use with only a water bath?

Meanwhile I'll see if our sleepy little New Mexican town has a pressure cooker I can run out and get!

In the last week, 10 pints of fig preserves, 10 quarts of tomatoes, over 30 quarts of veggie soup, frozen about 20 quarts of limas, peas, and 5 quarts of green beans and 9 pints of pear preserves....

That's it for the week and planning this weeks foray....

Anyone on the west side of Georgia with free/cheap canning jars, I'm serious! I need more!

Re waterbathing green beans, you must have a pressuer canner.....

or you can freeze them after blanching....

or you can m,ake pickled green beans without a pressure canner....
