What are you canning now?

Also have canned
14 quarts zucchini salsa
7 but one busted quarts sweet corn froze like 8 bags of it
tons of pickles dill sliced spear and sandwich slice and bread and butter

need to do green beans more salsa
will have a ton of peaches ripe soon if the stupid wind from storms will stop knocking them off the tree before they get ripe....

Well it is more of a add taste add taste kind of recipe but here is the basics on what I did this time

Zucchini Salsa

2 large zucchini run through food processor until desired constancy (chunky, puree, ect)
2 large cans stewed tomato (or equivalent home made)My tomatoes didn't do well at all haven't gotten a single one yet.
1 large prepacked salsa mix (mrs wagers)
several green peppers
several onions
cilantro
garlic
cayenne pepper
franks hot sauce
parsley
salt pepper
any other seasoning you wish to add
cook till flavors mix
add vinegar 1/2 -1 cup
process in water bath caner 40 minutes

I make in in quarts because I can't keep up with pints they are gone before I get the next batch fixed lol. So now i only use quarts for salsa lol...

like I said it is a mix and taste sorta recipe depending on how spicy you want it and what flavors you like of spices.

I use to freeze it but caned this year so much nicer to just pop open a jar with out having to thaw it for hour and hours.

have you tried zucchini jam? It is awesome with whatever flavor mixed you want.

You guys got me thinking about making my own vanilla extract to give as Christmas gifts. I ordered some vanilla beans from a very nice ebay seller. The price was good and the beans he/she sent were excellent quality. I now have 3 mason jars full of vanilla beans soaking in booze in my basement. DH was very confused when I bought 2 big bottles of liquor. I don't drink. He was

Yes, we get some sleep, but as you all know, it's a lot of work. When you open one of those jars in the dead of winter and smell the aroma of summer, it's all worth it.

I will trade you some zucchini for tomatoes lol.....my toms didnt do anything and I had 36 plants
but I have zucchini coming out my ears
