What are you canning now?

Wow...this post moves fast! My computer has been down for 3 days (uggh!). Read several pages just to catch up!

I've got to order vanilla beans. I see I'm falling behind on the extract idea.

i need a good salsa and banana pepper (like for subs) recipe. anyone got one??

B - we make these pepper rings every year for sandwiches and salads. Our favorite is to mix Anaheim slices and Banana Pepper slices in the jars. Usually I do some with Sweet Banana, and others woth Hot Banana for variations:

Anyone have a good canning recipe for apple pie filling? I want the slices to stay firm-somewhat. I have tried several in years past but upon opening they are mushy..like chunky applesauce.

Last year I made up the entire pies and frozen them..this works fine but takes up a lot of freezer space. Any recipes???
 
Just got done with my first 7 quarts of green beans in the pressure cooker. I have a total of 18 qts to pressure can. Precooked them slightly with bacon and onions that I browned first. Slipped a garlic clove or two in the jars as I was filling them.

The pressure canner is a bit more intimidating (at least this first time) but I think we are going to become fast friends!

The only pressure canner we could find in town was a 16 qt one.....with a family of 8, I have a feeling I will be investing in a larger size.

So far this summer I have canned:

Spicy Bread & Butter Pickles

End Of The Garden Chow Chow

Spaghetti Sauce

Raspberry/Nectarine Jam

Grape Jelly

and of course with all of our chickens....Pickled Eggs and Beets!

Today I am making more Spaghetti Sauce and the Green Beans.

Today, I made a Microwave Bread and Butter recipe. It was in the latest quarterly from Tractor Supply. I made a quart so we can see how we like it. My Dad has made it a few times and says it's a good recipe, but he tweaked it.

I also made Crispy Cucumber Freezer Pickles - another new recipe. I had made something like this many years ago, but I had thought I chopped the cucumbers instead of slicing. Tomorrow, I'll tweak this recipe and use chopped cucumbers, green peppers and onions. I plan to freeze them in freezer containers and once frozen, pop them out and seal in the Food Saver.

I'd love to hear what you all do with cucumbers. We are having a bumper crop this year and I can't keep up with them all. That means we have some bigs ones, too.

Red Onion Jam

7 cups thin sliced red onions (around 2 1/2 lbs) 4 cups sugar
1 1/2 cups apple juice 1/2 cup light brown sugar (I like Dark)
1/2 cup red wine vinegar 1 box SURE JELL LIGHT (NO SUGAR NEEDED)
2 t rubbed sage 1/2 T margarine or butter (you need this)
1 t pepper (black or white)

Measure 7 cups into 6-8 quart sauce pot. add apple juice, vinegar, sage, and pepper; mix thoroughly

Measure sugars into separate bowls. Mix 1/4 cup granulated sugar from measured amount and pectin into small bow. Stir pectin-sugar mixture into onion mixture in sauce pan. Add margarine. Place over high heat; bring to a full rolling boil, stir constantly. Immediately stir in remaining sugars. Bring to a full rolling boil and boil 5 minutes, stirring constantly. remove from heat; skim off foam

Ladle quickly into hot jars, filling to within 1/8 inch of top. Boil water bath 5 min

Enjoy this recipe, it came from 'Beyond the Basics' from SURE JELL

I found that if you have very lg onions cut them in half first or you get a big clump of onions, like a big knot, 1/8 of an inch slice works great and the 5 min boil is not a mistake

11 qts Brunswick Stew (an Eastern Carolina favorite)
3 qts Chicken Stock w/meat - from carcasses of 6 roos, dark meat went in the stew and breast meat to freezer)
7 qts Tomatoes, Peppers and Onion

Still dehydrating tomatoes....have over 4 gallon bags now....LOL

blackberry jam (from best friends neighbor)(they are also the ones who found me a rooster for my hens) Gotta love the neighbors of bf
grape jelly and 1/2 sugar jelly (went to best friend's house, she has the grapes and a press but hates to do the canning part so started the process at her house (always more fun if you do with a friend and a bottle of captain and 7up and a pool to jump in to cool off LOL) and brought the juice home to can and the "junk" from pressing to my chickens (they now are purple chicken LOL)
Zucchini/blueberry jam and 1/2 sugar jam

The only difference I taste is a little bit less sweet but still wayyyyy sweet may have to try with even less sugar or no sugar lol (the pink box of pectin) DD11 tried them all and said all way better than store bought. So that is a good enough endorsement for me. And now she eats jam sandwiches LOL

DD11 helped with all the jelly's and jams and after all the hard work said to me....
"Mom I had sooo much fun today"
I almost cried. My dd17 would never even think of wanting to help but here is DD11 asking what we going to do next!!!

Finally got my pickled beets done. 5 Quarts and 25 pints. Doesn't look like much, but the clean-up is always a killer from beets!

I will be working on zucchinni all day today!

CedarRidgeChicks, I've canned apple pie filling in the past. I'll dig out the recipe. It was from the Ball Blue Book.

The cucumbers turned out well yesterday. I have a bowl of chopped cucumbers setting in salt and will make the freezer mix later today. I have to use up these cucumbers.

I have my youngest grandson helping me today so no big canning projects. That's ok - maybe I'll get some sewing time in later.
