What are you canning now?

Please tell me your technique. I spent hours trying to pit them, ate that cup of fruit fresh, and decided to steam them with the pit and mash the fruit off... but they tasted awful, like hay.
Maybe freezing them would work. mine are large pits that the fruit clings to, and not that much fruit.
However, I too get bushels of them and hate to see them go to waste.
 
My pits just pop right out. Here's my technique.

Slice down the center with a paring knife. Peel, pop pits out with the blossom end.

In two hours, I usually have a good 6-8 lbs. done minimum. If you have a friend over, you can double that!

If I was having more issues than that, I probably would go with jelly and just put them all in a pot, rinsed, mash, get as much juice as I can, strain and make jars of jelly.
 
Last weekend, I made orange jelly/jam with the juice from 40# of Valencia oranges I got through Bountiful Baskets. 18 half pints and 6 pints. I drank a lot of juice, too. It is great as is and last night I added garlic and cayenne pepper and we used it as a grilling sauce.

Then I scraped the membranes out of the peels and made 4-1/2 gallons of orange vinegar cleaner.

I don't think I'll get to the Dandelion jelly cuz the lawn needs mowing and there is just to much to do. I gotta get that garden in.
 
For 6 cups of juice, I added 4-1/2 TBSP Ball low or no added sugar pectin and 1 cup sugar. Bring to a rolling boil that can't be stirred down and boil hard for 2 minutes, stirring constantly. Process in water bath canner for 10 minutes + 1 minute for each 1000 feet above sea level.

I still have strawberries, rhubarb, blackberries and raspberries in the freezer to get to canning.

I have been waiting for mango's to go on sale. This week they finally went on sale, along with limes. So mango lime jam is up next as soon as they ripen a bit. It's fantastic on pork.
 
I cannot wait to take part in this thread again!!! Bring on the veggie season!!! My gardens are in but expecting 20's this weekend:( Have to cover everything!
 
I hope to make Lilac jelly next week. Waiting for the blooms to peek!
