What are you canning now?

The only thing I've ever made with raspberries is jam. I usually use the recipe in the pectin package. Everyone loves it so much that I can never keep it on the shelf! Raspberries are my favorite!
 
Freezer jam can be a nice alternative to cooked raspberry jam. Has a fresher , non cooked flavor but must be kept in freezer until use, and once opened use up quickly.

Our raspberries never make it into our house . . . just into our mouths. lol
 
Today so far I've canned 7 pints of salsa and 6 pints of tomato juice. I am now working on cooking apple peels and cores to make juice for jelly. It is so much nicer to can when the temperature is 70 instead of 90 plus outside!

Peach Melba - one of my favorites
Raspberry jam
Triple berry (blackberry, raspberry, strawberry) - the most requested by my family members

I make jam and cordial. I also keep a gallon or two of frozen raspberries on hand for desserts in the middle of the winter.


Fresh sun ripened raspberries, vodka, and cane sugar. Eight weeks later and the cordial is ready to strain and bottle. After a year it gets even better. Never lasts a year. So yummy!


Fresh apple cider and vodka cordial is good in so many ways.

Rasberry cordial sounds REALLY good! Makes me wish I had more raspberries! At the moment I only have wild black raspberries , and I lost the battle with the birds this year!

I need to can more black beans. We go through them so fast!

And this is not strictly canning, but I'm making our yearly batch of apple pie "moonshine" today so it will be ready to drink once the weather cools off.

No kidding. I've been making vanilla liqueur. Same basic recipe: vanialla beans, vodka, and sugar. Forget lasting a year. They rarely make it long enough for the next batch to be made.
