What is a Paleo diet?

Paleo diet is awesome for your health and restoring balance to your body (like erinszoo mentioned about being good for diabetics), but it is strict. I've got a ton of links I can share with you if you want them. We are all gluten free in my house now, due to my son having a severe allergy to wheat gluten, and a lot of paleo is awesome for gluten free. But I digress. I've got a lot of really tasty and easy recipes if you want them, like I said. I've got to be able to cook so that my 5 and 6 year old will eat it lol :)

I forgot to post that I did make my blackberry jam earlier this week - 12 half-pint jars. Running them through the food strainer was much easier than I thought it would be, maybe because they were frozen first. I used the berry screen & I think I got out 95% of the seeds. The chickens certainly enjoyed the strainer pulp.

The jam came out delicious, but I wish it was a little chunkier. It was almost like a thick jelly. But chunkier means more seeds, and that's not a trade I want to make, I used about 6 cups of juice/pulp and have another 6 cups in the freezer.

With all due respect I am old and I've seen all the ideas of what is healthy. Fads come and go. On CBS this morning the new one is Coconut water.
My opinion is if you like and it makes you feel good fine.

Paleo diet is "awesome for your health and restoring balance to your body" is not a sufficient answer. Let me put another way.

Paleo diet is.....................? (I just wanted a simple answer, I don't have time to do a lot of research right now)

I bet the chickens want you to make some more!
I found that freezing my muscadine grapes before I juice them allows me to get more juice out and have a drier pulp.
 
So, no grains, no sugar, no processed foods.

You get your sugar and carbs from fruit and vegetables.
Thanks, sorry if i came off badly. DW was told to cut back on her carbs to help bring her sugar levels down. When folks talk about foods and fads, I always say, diet and exercise. There is no easy fix.
We always talk about how things were way back when, but they don't say we didn't have all the variety of stuff like we do now. Tomatoes didn't come in sixteen flavors, Olive oils didn't come in eight kinds. The variety of breads and rolls is ridiculous. Sometimes when DW sends me to the store I get confused.

Not exactly canning, but I made my first batch ever of refrigerator pickles yesterday. I used a recipe from allrecipes.com because I had all the ingredients in the house. It calls for 2 cups of sugar, but I only used 1/2 cup so it wouldn't be overly sweet. I had 10 cups of sliced (chips) pickling cucumbers fresh from the garden. I didn't even add the onion or the green pepper. Don't worry if the liquid doesn't cover right away...the water will come out of the cucumbers after they sit for an hour or two in the fridge. Just mix it periodically and push the cukes down to make sure they are covered once the liquid comes out. You are supposed to let it sit for a couple of days, but I thought they tasted good after only overnight. They are a sweet pickle, not a dill pickle, so don't make them if you are looking for dill. My 6 year old didn't like them because he is used to only dill pickles. A couple reviewers said they canned these pickles with a hot water bath canner, but others said this recipe is not designed for canning so find a different one. Just keep them in the fridge. A couple of weeks ago I canned 4 batches of sour cherry jam. I tried 2 batches of the standard recipe with tons of sugar that was good from last year. I also made 2 batches of a low-sugar version with less than 1/4 of the sugar and a special low/no-sugar pectin. The low-sugar batches came out more like a spreadable fruit with almost no jelly, but I think it's an awesome way to let the flavor of the cherries come through! These are sour cherries from our backyard trees. Talk about a ton of work - pitting cherries!
