What are you canning now?

No freak thing, sadly. Snow will come soon but it won't stay until the end of October. The weekend will hit 24 C highs and -7 or so lows( so 19F at night 75F days).
Yeah I get ripe tomatoes, but it's not always easy. Some years we get less than 60 frost free days... I just live in a frost pit. One year long before I gardened saw only 1 frost free day! 1 only 1!

So I did up some more Grape jelly but I've some questions.

Do you bring your jelly up to temp with the lid on or off?

While I believe I used the same amount of water in boiling the grapes AND measured the same amount of juice per batch, the second batch yielded an extra 4oz jar. Why would that be? I did keep the lid on for both pretty much.

The first batch though didn't have many "crystals" and I realized this AM that I hadn't let the juice sit the full 24 hrs, when I made the first batch.

When I started today the juice had sat more than the 24 hrs and there were "crystals" even on the sides of the pitchers (plastic) the juice was in. Pitchers were covered. Though not sealed. Just those plastic juice pitchers with the lid on.

Does anyone have a recipe for Grape plus another fruit jelly or jam? I expect to have some juice left over and do in fact have about 4 cups or so that I put in the freezer.

Will this be okay to use in the future?

You have my sympathy. Have you tried using "hoops"? Mine covered in plastic gets quite warm in the summer but sometimes the water doesn't even freeze in the black tubs I used for water.

I expect there are some dwarf trees that would fit in there nicely . Seems to me a long hoop covered in plastic might work for a few trees for family food. The same with berries and some veggies.

I have a 16x50 green house like yours or tomatoes would be impossible! Nice set up you have there rancher hicks. :) thanks for the ideas.

Back to canning... Anyone have any clever names for my newest salsa? it's got 12 habanero's, seven banana peppers, five hot red peppers, some nectarines and Yellow zucchini in it....

With all due respect no they would not adapt. In fact I've spoken to DW about moving south often. I can't take the cold. It's so depressing, not to mention painful. I have arthritis and hurt.

Now as far as your Salsa, is it to eat or rub on your aching joints?
