What are you canning now?

Was going to make more apple pie filling but decided 3 pies worth of stuff was good enough for the next year, I have more apple slices frozen if need be. Picked 4 milk cartons of apples Wednesday with a couple of friends and made 4 pies, and the canned filling, so now on to "apple pie sauce".

Here's a photo of my Schipp who I miss dearly. I had Sparkie for 17 years. She was a character. When she got older she was very reminiscent of Cartman on South Park....full of cranky opinions that were really funny in timing and delivery. We still make Sparkie faces.... And I miss having the clean floors of a low-to-the-ground kitchen shark.

 
She's beautiful. I would be lost without my boy Ruger. He truly is my little protector. Definitely full of personality and mischief. I know what you mean about cleaning the floor. Nothing funnier than watching him try to squeeze under the stove or chair to get a morsel that has fallen!
 
Yesterday I put up 9 jelly jars of concord grape/cider jelly. The recipe wanted 4 cups of juice from the grapes, but what I had made 3. So I grabbed the cider- un preserved- from the fridge and added it to make up the other cup. Still tastes like concord grape, so we'll call it good.

Nice. I think apple is a nice mild flavor that can be mixed with almost anything and the other flavor (grape) will still come through.
 
It was Cider Sunday! I harvested the last of the apple tree and got a wheelbarrowful which was then washed and sorted. Then set DH to work on the grinder and press... Ended up with 2.5 gallons of cider, which we want to turn into hard cider but haven't the time at the moment and so I canned it for playing with at our leisure. (Well, didn't can all of it. Saved some for a well-deserved cider & bourbon or cider & rum later)
We have hard cider bubbling away as we speak. Its our first year to make it so we're doing one gallon batches and trying different things.
 
I bought a bag of lemons and a bag of limes. Not sure why, we really don't use many in our daily lives, guess they were a good price or something ...

Looking to use them up before they go bad and I found a recipe for strawberry lemonade concentrate to be canned. Do you think I can make a strawberry limeade concentrate to be canned also? just substitute lime for lemon? I like the strawberry limeade koolaid packets, I am thinking this might be better.
