What are you canning now?

They are so easy to can.

yes, they are easy to put up...we grow some every few years....or we just buy a bushel from some of the farms near us.

Does anyone have a good source for inexpensive lids/flats? I hate paying $2+ for lids/flats and even more than that, I hate running out of lids & going to the store mid-canning.

This spring I plan to can some more strawberry rhubarb jam. Last year's was a big hit, as was the strawberry-rhubarb cobbler filling.

Does anyone make their own liquid pectin? It's so pricey at the stores around here. I read a while back about it & am curious what others have done:

Pressure-canning can damage glass-topped stoves b/c the heat gets so high it can crack the glass. You're better off getting a propane burner that you can use outside. I might get one anyway, since canning makes the kitchen so darn hot on warm days (that would be anything over 80 here in W WA State - we don't have A/C in this part of the country).
 
We pressure canned last year on a flat top electric and had no problems. I did probably at the most 25 quarts at one time. I can't wait to start canning my fresh produce this year, if/when I am ever able to get into our water soggen garden.

My Presto 23-quart pressure canner specifically mentions ceramic-top stoves right on the box. I use two of them on my stove with no issues. Be sure to lift when sliding it off the heat, and load it on the burner, not elsewhere, so you don't have to lift it onto the stovetop.

Gonna have to subcribe to this thread!! Actually need time to read it all, the cherry recipe caught my eye, yummy!! I love, love, love to can!!! Never,e ver thought to can boiled peanuts but love to make them and usually have some not eaten, can't believe I never thought of that!! Will try that, sure would be good in Christmas packages!! I assume you leave them in the briney water?

is always a good bet, but they only carry them "seasonally" here. I factor in the price of my time and gas when I buy such things as well! It is so wonderful to have 3 cases of lids on my canning jar shelves, and not ever think about whether I have enough lids or not.

Need more jars, though.....heard they are back in stock at Wal-Mart....
