What are you canning now?

The recipe I used called for fresh raspberries, but said that frozen could be used if they were thawed and all the juices were added... but they seemed really juicy to me and I think that threw it off. I may have added 1/2 cup more pear than I should have too, but it was in chunks and I didnt see how that would make it NOT set. But my pectin also was over a year old, just one I found in the back of the baking drawer and wanted to use up. Its really yummy, we are using it as ice cream topping

I will use these tips and try again, its such an easy recipe I dont feel like its a waste to try a few times

We did about 100 quarts of spaghetti sauce, salsa, whole maters, and tomato sauce
about 30 qts of green beans

Thats about it, our garden is done and the chickens are eating what's left, lol.

I really admire you for making up that many jars of apple pie filling! Throw a large handful of nuts (we prefer black walnuts)into the next pie and blow everyone away.
 
I have a money saving tip for bay leaves for next year...(that is if you don't grow your own)

Bay leaves for pasta sauce, which runs around $2.89 for .13 oz.(3 g and on sale)where I live is a crazy cost! Especially if you go through 2 or 3 of these a season-

Well, check out your local oriental store. I found bay leaves in .5 oz pkgs. for only $.89 each

My DH who was across the store couldn't figure out why I was so excited and trying to show him a pkg., grinning from ear to ear, until he came over to see what it was!! So I grabbed 2 bags equalling one full ounce for $1.78!! I was floored!!

We were rushed for time so I didn't have time to browse, but I'm going back to see what else they have!!

- Health food store cost less than a dollar for 1/8 oz which was way more than I needed.

In California we can actually pick Bay leaves fresh. Note to self: go find a Bay tree.
