What are you canning now?

I made a vanilla bean peach sauce. I skinned and cut like 10 peaches in half, added 1 cup of water and cooked on low for 30 minutes. Then put in the food processor until smooth. Put back in the pot with 1 split and scraped vanilla bean, 4-6 cups of sugar (your choice) and cooked on low for an additional 15 minutes adding the juice of 1 lemon. This was fantastic on ice cream!!!

My first canning endeavor ever. Last Saturday I was saying to myself, "Self, you've been wanting to learn to can for a long time. The muscadines are calling, go get em."
So I made a phone call to a pick your own muscadine vinyard that's not too far from my house and sure enough they were ready. So off I went to picking.

I've been gathering canning essentials like my big water bathing pot, jars and cheesecloth and jar tongs...etc. I stopped at Walmart on the way home for more sugar and sure jell....I was excited, a little nervous, called my mom, she said you can do this! Worst case scenario, you end up with a bunch of jars of pancake syrup!


So I set to work!

I couldn't be more proud of myself. The sound of a jar sealing is such a beautiful sound! Pop. Pop. Pop. Every one sealed. I have 6 pints and 9 half pints of muscadine jelly.
I'm looking for a decent pressure cooker now. I have the canning bug, and am looking around for my next canning project.
 
We picked the last of our muscadines so we too will be making jelly this week,.. we harvested so much that we will use some to make a mixed fruit jelly this year.

Also making Hot Pepper Jelly with my tobasco peppers and bell peppers! I will put those in gift jars for my family!

Hooray that is so awesome!!! I hope to be seeing more of you here now. Once you catch the bug, there is nothing you can do but succumb to that calling. And yes... a decent pressure cooker should be on everyone's list.

I am twisting my brain as to where pressure cookers were on sale- winter apparently is not canning season...somewhere. Here it is year round. Like bathing suit season, but try finding a bathing suit after July fourth.

Walmart? True-value? Ace? For a person that never gets out I should remember this. Tractor supply had everything 30% off. Try there first.
