What are you canning now?

Just done 5 pints of Hot Pepper Butter. This is my first time making this stuff and I am amazed how good and easy it was to make! Take a looksee

Here is the recipe, but you can use it as a guide. I didn't have that many peppers and all of mine weren't hot, so if you like it hot use more hot peppers or you can add heat to it with cayene or hot pepper seeds n flakes. Mine turned out hot enough for me with a mix of hot cubanelle and banana peppers and a few Italian fry peppers. I also cut the sugar a little and the mustard. You can taste it as you go to your liking. Also I used clear jel. I don't think you can mess this up, it's an easy fix if you need to fix it.

HOT PEPPER BUTTER
Ingredients

36 hot banana peppers
1 quart cider vinegar
1 quart prepared mustard
6 cups sugar
1 cup flour (note: I will now use Clearjel – same amount)
1 cup water
Directions

Grind peppers finely (I put in food processor until they are a mush).
Place peppers, vinegar, mustard & sugar in a large pot & cook a while (until pepper bits are translucent). Add flour clearjel (that has been thinned to a smooth paste with cold water) to mixture in pot, stirring constantly. Cook until thick and smooth. Pour into hot jars, seal, boiling water bath fifteen minutes.

Happy Chooks... I been using it on sandwiches, but you could use it on meats, or as a dip. It's kind of like a sweet mustardy dip but with a peppery taste.

Garden Supply has a storage rack set up for potatoes , apples, etc, etc. I was wondering if any one has anything like that and how they work.
