What are you canning now?

I just thought minced might be easier to use in recipes:idunno
 
Well I'm trying to can some apples, and having some problems...well my water bath caner hasn't been used in so long the cover is lost????????? what gremlin used it for what I have no clue....... so I figured ok I'll take the ring out of my pressure caner and use it, well I have never done quarts in it like that before and no way no how can I get an inch of water over the jars???????????? Will it still work???????? its as full as I could get it and boilin out the top all over the stove and my neatly placed towels to catch it.. and it still is barely covering the jars. I have lots more apples to do too and I'm probably gonna have to go buy a new caner. But can't do it today. HELP experts what do ya think? Can I pressure can them? I just made a syrup of honey and sugar, medium maybe........ added a touch of Cinnamon cooked my apples in it for 3 minutes, filled my hot jars, added extra syrup to 1/2" from top and 2 piece lids adjusted and in caner.


UpDate all the Jars did seal.......so now waiting for the yah or nah from these wonderfully smart expert canning peoples.................
Should I redo them in the pressure caner ? I found my caner book and it says 5#'s pressure for 10 minutes...this will most likely make this batch into applesauce........... I will do the rest this way from start, but still haven't figured out just why the jars must be covered with at least 1" of water??? does anyone know that question? TY all Kim

You could roast the garlic too before canning... thats good in a lot of recipes.

Only 2 days from going to the NC State fair... I really hope at least 1 of my jars 'placed'. I've gone through so much this year... I think I just need to reassured after all I've gone through that its worth it to keep going with my jams, business and recipes. Who doesn't need to have a little pride to keep up the hard work, no matter what the work is? I know the judging is done... I just haven't gone to look yet... so nervous!!!

Anyways, I'm pretty much done canning. I'm out of drive and I'm out of funds to buy what I need. I have over 600 jars in the pantry that need to SELL so we can get through this year as is. I just 'might' can some of the tomato apple chutney again... it was pretty good and I'd have to not have any on hand for those Turkey sandwiches after Thanksgiving!

Finishing up the last of the tomatoes and making salsa! Everything we use in it comes straight out of our garden. Sadly to say but I think the garden is done. Only a few a few stragglers left out there

. I might freeze some apples next. I have a bunch and it's always nice to have them on hand when I want to throw a pie together!

I make an apple liquor from extra apples!

I fill quart jars with fresh quartered apples, skin, core and all. Then cover in cheap vodka and store at the back of the pantry for 2-4 months. Filter the alcohol out when ready and bottle. You can through out the apple left overs... if you want!
