What are you canning now?

I am so Jealous of all those with apple producing trees. . . . Last year, I planted apple trees . .. . but I don't know of too many folks in this area that are successful with them. Before that, I tried to grow nectarine trees for many years no success. I did plant a "baking" pear tree. I do think I might get fruit from that one. I have been successful with plum trees

Peaches and nectarines will be affected by the apple rust that cedars carry. I had lovely peaches until the neighbor lined her drive with about 3OO cedar trees. The producing trees died, and all replanted trees eventually die.
If you have cedars, you may decide they are not worth the space.

have 6 half pints and 1 pint of pearsauce in canner. Will be making more pear things soon!

also put 2 gallons of fruit scrap vinegar in the stairway- never tried this before so we will see how it goes!

I don't like ceders at all. My DH say's I dislike them as much as he dislikes elm trees.

Yesterday I did another 28 quarts boiled peanuts, today was 12 and the remaining amount was frozen in 20 quart bags.
So 50 pounds of raw peanuts..... done. All total was 89 jars with only one (so far, have to let this last batch finish cooling) not sealing and that was only because it was an older jar that has never sealed for me and I can't figure out how it got into the usable/can-able mix of jars. 26 of the jars were my mom's and will be going back to her house.

I have officially broken in the canner.......... Now to contemplate soups, beans, meats........

I think I'm going to need more jars

I've just come across a recipe for Cranberry Apple Jam, anyone love it? I was thinking of doing a batch or two tomorrow and was hoping you all have some input for me

I have been canning almost all my life, but
have never canned greens/collards. Anyone
here tried it. An hour and 1/2 to process?

Let me know if you think it's worth it, please.

Ok here's what going on.

We picked a lot of different kinds of apple. 89- 70 cents a pound. I'm doing them up today. Cuz they have to be done.

So if you can send me some "easy" recipes that would help.

But get this. We got invited to dinner last Sunday after church and the friends we were going to visit (in their new house) have an Apple tree right smack in the middle of the front yard! Apples all over the lawn and on the tree. Not sure what kind but heck they're apples, right?

krcote- send me that recipe please. I 've been to the farmers market and have cranberries..

I'm going to be working on an Apple compote with walnuts. Looks like a good ice cream topping. Or on waffles or pancakes.

I hope this posting doesn't end cuz there's lots to do yet.

Oh and the Egg plant preserves went over well with Italian friends. One lady mixed it with tomato paste.

The Pear , rhubarb, ginger was a big hit too.

thanks to all who are here.

ta, ta for now,

Rancher
