What are you canning now?

Just finished (finally) 10 qts. of collards.
Plus fixed dinner for me and DH, and a
friend who just had a hysterectomy.
Have Kalhua simmering now. AHHHH!

1 qt. H2O
4 tablespoons instant coffee
1 1/2 c. brown sugar
1 1/2 c. white sugar
1 tablespoon vanilla
Simmer 1 hour
Cool to lukewarm, then add 1/5 Vodka

I double the recipe and add 1/2 gallon vodka


I know true Kahlua is made with rum, but this is sooo good!

I bottle in old dark wine bottles and give for Christmas
 
Quick canning question..... when making weveral batches of ....say.... applesause, would you change the water in the waterbath canner? I would think that you would need to if making cowboy candy then, say applesause. But what about several batches of applesause?

Cleaning up all my canning jars and getting them boxed as they are emptied for next years use. Oh, I love fresh canned meats, veggies and fruits.
 
Is anyone canning cranberries / cranberry sauce? I am thinking of trying it, but in the 4oz jars because I'm the only one in the house that eats it

Anyone have a good cranberry recipe (not just sauce, I have one for that)?
 
canning poultry stock today.

Cooked a turkey yesterday, used 1 turkey carcass and 3 chicken carcasses that I had been saving. Ended up with 9 Quarts and 9 pints! YUM
