What are you canning now?

I made lemon curd today,
and used up 34 egg yolks...unfortunatly it isn't shelf stable so to the freezer it goes,
but oh my gosh..sooooooohhhhh mmhhh tasty...
 
Just peeled nearly 30 lbs of roma's and lemon boys. My fingers are wrinkly to say the least. :p

Tomorrow I have to work all day... boooo... but tomorrow night I be canning! I'm hoping to have about 12 quarts of whole tomatoes when I'm done. That should leave me 3-4 quarts of quartered tomatoes. All this so I can go pick the tomatoes that are literally falling off the plants because I can't keep up harvesting!!!

My husband helped me bag the tomatoes and tupperware them and put them in the fridge until I can get to them tomorrow. I also picked and cleaned 3 gallons of figs today. Those are bagged in the fridge for tomorrow too. AND I made fig fruit leather and strawberry/mango fruit leather. I can't believe I did all that plus made dinner, 2 loads of laundry, ran my daughter's friend home plus I worked until 2 today. I'm starting to think I never sleep!!!

Holy cow you were busy!

Tomorrow, hopefully, my kitchenaid fruit/veggie strainer should arrive. Just in time, we covered a 48" round table with tomatoes. (from a 6 pack of plants)
 
Indigo - tomatoes themselves are high in acid but if you add peppers, onions and other things to salsa that might bring the acid content down. The recipe should tell you.

3Good - it has been so dry here that even the weeds are wilted and the ground outside my raised beds is cracked. Even last nights rain didn't help. The Rose of Sharon picked up after watering but I'm concerned about my water bill.

I want to put in a hive but I've no time to tend to it. There are other types of bees than Honey bees but I would have to learn how to harness them and what it would take to keep them happy enough to stay around.

We are on a partial water ban here. Even with the rain the last two nights, the garden (and everything else for that matter) is looking pretty dry and wilted. I think the rain came down way too fast and way too hard for the ground to absorb it well.

Looking at your siggy ~As is the garden , So is the gardener - unknown~ hmmm.....that makes me dry, wilted, and a bit weedy...

Hoping to do some peaches & maybe peach preserves this week...we are so busy this weekend, so I'll have to fit it in after work this week *crossing my fingers*!
