What are you canning now?

I am tomatoed out! Recruted choppers last night and processed the other 66 lbs of Romas...9 quarts of sauce 15 more salsa..6 bags in freezer for when I get the energy to touch them again!

I am going out of town sat so I have to finish up canning..still have kiwi jam and mango cilantro salsa to o!:D

Well, I used the Mrs Wages salsa seasoning last night, used the 6 lbs of tomatoes like it said, but added 34 jalapenos, 4 Serrano's, 1 large onion, cilantro, and 4 cloves of garlic, and it did turn out yummy. The total batch ended up making 6 quarts.
 
Imwas thinking the same thing!!! Holy hotness I put 6 huge peppers in mine..lalapenos in 12 lbs of salsa..Im a sissy pants I guess!! Lol
 
Water is on to boil now to peel tomatoes, Still need to do the salsa tonight. Just finished 7 pints of pickled green beans. I don't know how to say no when my sweet neighbor asked me if I could use some excess tomatoes and green beans that she had. The green beans take forever to stem and sort, but they are worth it. We use them in place of olives in a martini. Looks cool and tastes great. A few drops of the pickling juice makes a "dirty martini with a kick. I put 2 sprigs of fresh dill, a large clove of garlic, and a dried red pepper in each jar. Too bad it takes 4 weeks before they are ready for eating!!!!
