What are you canning now?

Got a deal on pineapple for 99 cents each so I canned 7 pints yesterday and bought four more of them to do later this week. Also bought 10 bags of cranberries at 69 cents each so I'll be doing our cranberry sauce and more cranberry juice. We did more apples and made 8 half pints of caramel apple jam - yummy! The biggest test will be the chicken ... I'll have 250 pounds of chicken to process. Half of it we'll do before Thanksgiving and the other half before Christmas. UGH! I'm kinda scared just thinking about it.

That's a lotta chicken! It'll be some work but it'll sure be tasty :) Great buy on the fruit!

I've got 13 pints and a half pint of lima beans in the canner now...I can't stand 'em but Bro loves 'em. Also made a huge pot of baked beans that'll go in next.

I've been sick, but I have got to get over to my grandmothers and pick a bunch of apples. I'm out of apple butter.

Mickey would you be so kind as to share your baked bean recipe???? I want to find a good one and not waste my time or money on no good tasteless mush!!
 
69 cents for cranberries??!! Wow niceee ..I got mine for 1.99 a bag 3 bags was about 9 cups. and ended up giving me 8 half pints of lush cranberry sauce. ..I am not displeased but for 69 cents I would have bought out the whole bin ..LOL
 
Here's the recipe I found, and of course (since I simply am unable to follow to the letter), I "fiddled" with it. It's vegetarian because DH can't tolerate any pork products.

3 C beans, 2.5 C broth, 1/2 tsp salt, 6 oz can tomato paste, 1/2 C molasses, 2 T dry mustard, garlic, chopped sauteed onions.

Soak beans for about 12 hours, rinse. Mix all ingredients into slow cooker. 6 to 7 hours on high or 10 to 12 hours on low.

I used pinto beans because I had a whole lot of 'em. I used both chicken and beef broth, but you could also use the powdered if you want. I used dried garlic and onions (it was what I had), I used seasoned salt and added a T or so of ACV. I also had some "fake" bacon bits and threw in a bunch for flavor. If I didn't have the pork restriction, I'd have used either a hock or back bacon for flavoring as well. I ended up with so many I had to add some tomato juice as well; they'd absorbed most of the other liquid, so I topped the jars off with the juice before canning. Ended up with 11 pints, and hubby says they're good :)
 
Alright guys I have a question for you all. I was going to make some strawberry jam tomorrow. I seem to have a bunch of pectin in my cabinet from last year. Do you guys have a favorite? I have liquid Certo (4 pouches), Ball powdered, and sure jell 1 box natural, 1 box sugar free. I was gonna use either the liquid certo or the ball powdered since I have more of those 2. I have no clue which to use though. Does liquid vs. powdered change anything about the final result?
 
I've never much cared for the liquid, although that was all my Grandma ever used. Never really noticed any difference between the boxed stuff; they've all worked well for me. If you have room, I'd recommend using the recipe for the freezer jam. Particularly with strawberry, I find it has a much better taste, since it doesn't get cooked.

I use only sure jell, but IMO any of the powder is good, I have not yet had the desired results with liquid pectin, but others have.
