What are you simmering away in the crockpot now?

My mother has used short ribs or beef tip ribs for her crockpot stews and beef tip with gravy with mashed potatoes or rice...........lickalious!
 
Black beans
Chopped tomatoes from the garden (I have SO MANY)
Chopped onion and cherry peppers
Chicken stock
Chili powder, garlic salt(I cheated)

It's basic, yummy, good over rice, and about 10 cents a serving too.
 
this is vegetable beef soup my grandmother used to make. two large beef shank soup bones.. simmer in water to cover, 1 chopped onion, 1 - 16 oz. can whole tomatoes squished between your fingers to break up, simmer till beef fall off bones. add can of corn, string beans, lima beans, peas or what ever veggies you like, and dice up a potatoe and couple of carrots and one celery stalk and i like about half a small cabbage diced, salt and pepper to taste.. cook till tender. shred beef and put back into soup and serve .. good with cornbread and butter and honey. soup takes all day in a crock pot or several hours on stove top in covered pot.
