What is the WHITE on the yolks? (PIC'S)

LOL we sometimes hard boil ours, and they come out nicely. How can they be ugly anyway???

They were fresh, 2 days old. They weren't fertile because we don't have a roo but my husband said the same thing. He thought they looked fertile. Thanks for the diagram coffeelady!
