Our rooster is in picture #1 and is black mottled.
We have a few Plymouth Barred Rocks.

These are the boys we got out of the combination! Woukd this be considered barred with the V look? Or?

The few Blue Cochins we got with the mix with the rooster also had the V design on them. Any help with an explanation would be amazing.

It looks like barring to me

If I look at photos of barred chickens, the v-shaped barring is pretty common in the tails, especially on males. McMurray hatchery has artist's illustrations of what their breeds are "supposed" to look like, and those images also show the v-shaped barring in the tails of males. Examples:

Yes definitely looks more like the Dominique’s which I’ve always liked their barring. We have Plymouths and they are just kinda plain barring. Good combination for me anyways. Curious why it’s more like a dominique with her offspring.

I don't know what specific genes make the barring look one way or another way. (I am assuming it is genetically controlled somehow, and I think you made that assumption too.)

Based on how many photos I see with which kinds of barring, I would think perfectly straight barring (like on some Barred Rocks) is probably harder to achieve, with genes that are less common in most chicken flocks. So it you like the barring you've got on those cockerels, it may be the easier version to get :)
