I just baked some crustless pumpkin pie. I guess it's actually a custard. It uses the same recipe, but baked at a lower temp, at 300º. You bake it only until internal temp reaches 165-170, not until a knife comes out clean.
It's so easy and quick when you don't have to make a crust. I just threw the ingredients in the blender, and poured into a buttered pie pan. It didn't stick, it slices like pie, is lower in calories, and is DELICIOUS!
