Orange Cream Cheese Pound cake.....takes 6 eggs

Just do a search online and it will come up....not the one that uses the orange soda but the one that uses orange zest. I made a glaze for the top with powdered sugar and orange juice and then enough milk to make the right consistancy....and then some more orange zest and glaze the cake while still warm.

It is YUM...

Here's a good appetizer that uses six eggs and is super easy:

SPINACH POM POMS
2 (10 oz.) pkg. frozen chopped spinach
2 c. herbed stuffing mix, crushed
1 c. grated Parmesan cheese
Dash nutmeg
6 eggs, beaten
3/4 c. butter, softened

Thaw spinach, drain, squeeze out all excess moisture. Place in medium bowl, blend in remaining ingredients. Shape into balls the size of walnuts (about 60). Refrigerate or freeze. Before serving, preheat oven to 350 degrees. Lightly grease baking sheet. Bake 10 to 15 minutes, or until hot. Drain on paper towels.

I made these last night and they disappeared the fastest of everything on the buffet. Also you can make them ahead of time and freeze, bonus. Though, next time I think I will probably try a little less butter, and maybe some chicken broth.

Texas Fudge

14oz package shredded cheddar
14oz package shredded Monterrey jack
chopped green chilies and/or salsa, to taste
6 eggs.

Blend both cheeses and chillies together and layer in a greased 9X9 pan. Scramble six large eggs, and drizzle over cheese. Bake at 375 for 30 minutes. Cool, cut into squares. Add friends and a football game.

I have this baking in the oven now- the batter was incredible! I used Neufchâtel and cut down on the sugar by about 1/3 cup, so we'll see. Smells amazing! I'm going to find an orange or lemon icing recipe for it...DH had better take it to work tomorrow seeing as how I've had quite a bit of this rich cake already- i licked bowl and the beaters :) who doesn't?

Our family loves egg casserole. I scramble the eggs, cook up some turkey or deer sausage, and small chunks of already cooked potatoes. I also add lots of spices, onions, and veggies can be added too. Then top it off with some cheddar cheese and pepper.
