what to do with too much squash

We have been getting ripe tomatoes from the garden the last 10 days or so and I've been making roasted squash and tomatoes every other night. Very easy and delicious.

Just throw everything into an oven proof skillet as you cut it up, salt and pepper, drizzle with olive oil. Give it a mix and throw in a 350 degree oven for 30-40 minutes.

This has a couple of too big squash that I quartered, cut out the seeds/pith and sliced, one tomato relieved of the pulp and julienned, a half dozen fresh shallots, three cloves of garlic, one serrano and one habenero chili (both still green), and a big handfull of fresh basil.

Here it is raw, looks good enough to eat as is.

..everyone..just skimming through I didnt see any fritters listed..they are great and you can use yellow or zuchinni..

they were quite popular on here last summer. Im sure there is a recipe on here somewhere..basically it is shredded squash, flour cornmeal, egg, grated cheese, little ground red pepper, onion salt or minced onion,a dash of worchestershire sauce mix and drop by spoonfuls in hot oil , flip, drain..enjoy..they are great!!
 
Didn't read all the posts yet but I slice my zucchini about 1/4" or so thick put in a ziplock bag and add italian dressing and let marinade. Then cook it on the grill. It's absolutely delicious. Hubby and I eat a whole large zucchini ourselves this way. You gotta give it a try! Sandra

or do you mean fried like potato chips?
Halo has a recipe for beer batter fried zucchini, somewhere in the front.

I think it is the second link on the first post. You skin and seed the large zucchini, then cut them into cubes or strips.
Then you make the flavoring: (The pineapple is fantastic, and the black cherry is better than cherry. I have mango kool aide but I have run out of squash fo a while....)
ANYWAY, two packages of kool aide, add 2 1/2 cups of sugar and 2 1/2 cups of water and bring to a boil.
Add the 10 cups of peeled and diced zucchini, return to a boil. Then, cut the heat to simmer and let it simmer for 25 minutes.
after that, drain it and put it on your dehydrator. Turn it once, and when it is a nice soft and chewy consistency ~try not to eat it all before you let them cool ~and put them in zip lock bags.

The instructions show pics of them. I figure they are lower calorie than candied fruit, and no corn syrup.
and the candied pineapple flavor I am saving as a substitute for the real candied pineapple for fruit cakes.

I think the mango flaver will be great in trail mixes.

*I edited it to make sure you see that it is 2 1/2 cups sugar not 1/2 cups sugar, then they would be like sour patch gummies. hummm...
