Victorians have woken to more icy conditions this morning as the mercury plunged below zero across the state yesterday.

A number of weather records were broken during Monday's cold snap and the Bureau of Meteorology said cold morning conditions would continue throughout the week.

On Monday Melburnians shivered through their coldest start to a day since August 1 last year, with a low of 2.3 degrees Celsius recorded at 6am, at the Olympic Park weather station.

"Most notably for Gippsland was Morwell where it reached -3.9 degrees, that was the lowest daily minimum temperature on record from May in 42 years of data," senior forecaster David Crock said.

This morning, at Coldstream, the temperature dipped to -5.4C at 7.30am.

This week's cold snap followed weeks of mild and dry weather that has put added strain on farmers dealing with drought conditions.

Mr Crock said it had been an "unusual May" thanks to a series of blocking high pressure systems directing warm air across Victoria.

"Last week, most places around Victoria, we're looking at the first half of May being about 4 to 5 degrees above average," Mr Crock said.

A heavy frost has blanketed parts of the state this morning.

"The frost warning is for significant crop damage which can result from the frost in agricultural areas and it can make driving slippery," Mr Crock said.
