When can we start eating our ducks eggs?

That's up to the duck. She may not start to sit on her eggs until she's got 2 dozen in her nest... or she could one day decide to sit on just one..

You can start incubation at any time in an incubator, it'll take a few days in there before you can tell if the embryo is developing.
