My room mate just met his goal of 150 lbs last month. He lost 80 some lbs- as much weight as our dog, just about!
We are all really proud of him, and I for one am glad that through our attempts to support him, the rest of us have started eating healthier too!
A recipe (more of guidelines, really) that I have made a LOT is this stir fry. It isn't too many points and it sorta curbs the chinese food cravings a bit. Best of all, its EASY and even my picky family loves it!
This recipe makes enough to feed about 5 adults
3 bundles of somen rice noodles
1/2 head of purple cabbage
1-2 lbs. chicken or other meat, or maybe even scrambled eggs
teriyaki sauce
soy sauce
1-3 tablespoons (oil if you don't have a nonstick wok/pan)
assorted veggies, pick what you like! I have used the following in various combinations
1 onion
4-6 garlic cloves (or teaspoons of canned minced garlic)
2 carrots
1-2 cups peas
3 celery sticks
1 small head of broccoli
1 can waterchestnuts
2 cups diced mushrooms
1 bell pepper
1 bundle green onions
1/2 zuchini
The noodles cook in 3 minutes once the water boils, so just fill a pot and set it on the stove while cutting veggies.
Dice the meat and onions. Mince garlic. Cook all three, and add in teriyaki when almost done.
Put oil in wok/pan (you may not need it if it is non-stick!) toss in veggies (but not the cabbage!) and sautee till they are done enough for your liking.
When the water boils, just follow the directions on the noodle package.
When noodles are done and rinsed, throw them in the wok with the veggies. Add the meat. Drizzle on soy sauce and stir fry!
Word of caution-the longer the cabbage is in contact with the noodles, the more they will turn a rather odd shade of blue. Still edible, but doesn't look apetizing!
This recipe has pleased veggie-haters, chinese food haters, picky children, and (when spilled) the dog. It is very filling, reheats well as leftovers, and can, theoretically, be eaten cold as the noodles recomend. It works as a whole meal, no need for sides. All in less than an hour and a half (and yes, all the chopping is included in that time) This is a great recipe for experimenting, and is also easy for kids to help with. And a great way to use up surplus veggies.
