Your best summertime crockpot recipe

Just thought I'd let you know that I'm trying the crock-pot chicken method today. Except I ran out of tinfoil and haven't been to the store to get any so hubby got clever and suggested using our metal veggie strainer upside down in the bottom of the crockpot w/ the chicken on top! It fits perfectly and the holes in the strainer will let the juices drain down to the bottom of the pot. I'll update later to let you know how it works.
 
I always use my crock pot. Lately my favorite is Italian Chicken and
is super easy. My kids and husband also love it. I just throw some frozen chicken breast in and pour a whole bottle of zesty italian dressing on top. Cook high for 3 1/2 hours or low for 6. When the chicken is done I boil some minute rice. Place chicken on top of rice and pour a little of the liquid from the pot on top. Super yummy, super easy.
 
I make this in my crockpot in the summer but can be done quick on stove in the winter.

Pork chop gravy
You can use whole pork chops or cut into strips

2 lbs of pork or 6 to 8 chops
3 cans of tomato soup
1 can of paste
1 green pepper sliced
1 sliced onion
salt and pepper to taste
1 cup of water or beef broth

place all ing, in crockpot and cook on high for 4 to 5 hrs or till meat is very tender.

This is really good over mashed potatoes or rice, or even egg noodles.

Pork Medallions

1 pork tenderloin sliced into 1/2 thick pieces
1 can golden mushroom soup
1 can french onion soup

Put pork tenderloins in the bottom of the crock pot. Mix the two soups together and pour over pork. Cook in the crock pot on low all day, and enjoy!
 
I throw some chicken breasts in <boneless skinless> and then just barely cover them with salsa. Any kind will do... spicy/non spicy...it really doesnt matter

Cook it on low for about 7 hours or so, then when chicken is tender and falling apart, just shred it and add back to the hot salsa mix. Serve over tortillas with guacamole, sour cream and lettuce and cheese.

Its amazingly good and so simple!!
