Here's a final pic of what I ended up with. Lots of chipmunks. ;-)

To get the humidity up quickly, you can always spray a mist of water toward the wall of the incubator. (Trying not to get eggs wet.)

In the longer term, adding sponges works well. I like to put them in a glass of water & then have it poking out as a wick.
At our house, I'm often low on kitchen sponges so a feminine pad works very well. (High water-holding capacity, sanitary, & disposable.)
