Your situation is certainly understandable. In fact, we're not totally out of the broody business either. We still have a 50%CX sired by a Dark Cornish setting on 11 eggs, about half of them are pure DC and the rest are from the setter and the same DC cockerel. Hope that makes sense.

We have several hatchery dark cornish that have almost all gone broody. To my dad it's a curse but to my sister, it's wonderful and she has eggs under all that set.

I try not to get too involved with what others do but I have preached at every opportunity that keeping different species together is a bad practice. I know people who run cattle with goats and inevitably goats get trampled...at the very least.

There are several production/dual purpose birds that make capons that are more than adequate but something such as a leghorn would certainly be dredging the bottom of the barrel.
I'm not varidgerunner but folks like me ignore the standard to some degree and breed what I need to serve my purposes. I don't sell live birds so there is no chance of misinforming anyone, even by accident.
I WILL sell dressed capons and the proof is in the eating, regardless what composite...
