I don't watch, so times are perception. Start one bleeding out and do something else. For example, start bleeding one, check water temp. Scald & pluck the one before it. Gut and put in ice chest. Grab the one in the cone, start another bleeding while rinsing & scalding that one.
That was confusing. Always have one in the cone while processing the one before it. I only use one cone. Even with helpers. Hand plucking takes time.
Yes. They crane their necks up. Instead of grabbing their chin to stretch the neck out, I hold them upright, position shears and done. Pin to fence and grab next. Wrestling with them hanging isn't something I'm in for. Chickens calmed down. Quail don't. I'll try it Sunday, but holding is quicker. May try it with Jumbos. My hands aren't that large.
